kitchen :: taco soup


Ask anyone that knows me and they'll tell you that I don't cook often!
That's not good considering I'm getting married in April. If it were up to me, I'd probably
have cereal for dinner every night (and maybe the occasional night of pizza or chinese take-out).
Not only do I teach first grade, but I also have the palate of a first grader.
Ben, on the other hand, is an amazing cook! I feel extremely lucky, but guilty at the same time. 
The poor guy would starve to death if he didn't know how to cook for himself!

We've been in school for about a month now and I am finally starting to form a routine.
Because of that, I have decided to try a little harder to share dinner duty with Ben. 
I tend to pick dishes that are quick and easy OR involve a crockpot.
I love the fact that you can put it in, it cooks itself, and is basically
 ready the minute you walk in the door! It's a good fake-out for, "Yea, I know how to cook."

Don't get used to me sharing a recipe on here. :) They'll be few and far between.
However, with the start of football season and fall around the corner, I knew this would be
a fun dish to share. I'm sure you probably have your own 'touch' of this same recipe!

Nom Nom Taco Soup
Ingredients:
1-2 lbs. ground beef (browned) 
(depends on how "meaty" you like/want it...I used more meat this time because we needed to cook it soon!)
1 onion (diced)
4 cans tomato (diced)
1 can corn (strained)
1 can kidney beans
1 can pinto beans
1 small can green chilies
1 pkg. taco seasoning
1 pkg. Original Ranch Dressing mix (dry)
{Note: I buy the Del Monte can of diced tomatoes with onion and 
green chillies already inside! It makes it SO much easier!}

Dump all ingredients into a crockpot and cook on low all day.
I serve it with Tostitos Scoops, a little grated cheese on top and a drop of sour cream
in a bowl. What's even better is that it stores well, so you can warm it up and have leftovers.

So thereyahaveit! The easiest dinner to make. If I can do it, you can.
It's simple, quick, and perfect for upcoming cool fall weather!

  1. I swear by crockpots. They're seriously the best and make dinner so easy! I always love trying new soups and anything mexican I'm sold!
